Garlic Turkey-Broccoli Stir Fry
With the left over turkey from yesterday I was looking for a quick, light dinner. Health.com offers a great meal that you can prepare and cook in less than 15 minutes! I served my stir fry over quinoa. The qunioa actually took 20 minutes to make, so get that boiling first.
Grating in some fresh ginger gave this dish the perfect punch of flavor.
I also added edamame and tri-colored pepper.
Afraid it would be too spicy for the boys, I eliminated the crushed red pepper.
