Corn Chowder


I was a looking for a soup to serve with BBQ ribs.  The logical choice was corn chowder.  I love the simplicity of this soup.  I found an easy recipe from The Magazine of Yoga.  




Corn, broth, salt, pepper, onions, celery, potatoes, red pepper and chives.


I sauteed the red peppers with the onion and celery instead of roasting and peeling them like the recipe suggested.  I found this easier and less time consuming.  

The chowder is so simple...sauteed onions, celery and peppers then add the broth, corn, potatoes and bring to a boil.  Let simmer for 20 minutes and add salt and pepper to taste. 


Blend the soup to make it more like a chowder.
