Crisp Apple and Sausage Salad


Tuesday = salad night in my house.    
Whole Food Market had some homemade sausage on sale this week, so I had to find
 a way to incorporate it into our weekly dinners.  
This salad recipe from allrecipes.com is fantastic. 
Try it!  


The dressing is a cinch.
Whisk together
1/3 cup olive oil
1 t Dijon mustard
1/3 cup fresh lemon juice
salt and pepper



Slice the apples and douse them in fresh lemon juice to keep their crisp, bright color.



Toss together 
Mix Greens
Arugula
1 small Red Onions
1/2 cup Pecans (I used pistachios)

Cook and cut up sausage.
