Chicken Enchiladas

I have never made enchilades before until yesterday.  
They were so much fun to make, not to mention delicious to eat!  
I used a recipe I found on the Food Network by Tyler Florence.  
It was so easy to follow.  
Try it.  





First cook the chicken and let cool.


Saute onions and garlic until tender.


Add corn, black beans and chilies.


The recipe called for canned whole green chilies and chipolte chilies.
  I used diced green chilies and chilpolte peppers.  


Stir all together until combined. 


Add stewed tomatoes and saute one more minute.




Pull chicken breast apart into shredded strips.



Add shredded chicken to saute pan and combine with the vegetables.


Coat bottom of pan with enchilada sauce.


Dip tortilla in enchilada sauce.



Lightly coat with sauce.


Fill tortilla with chicken and vegetable filling.


Place seam down in the pan.


Cover with enchilada sauce.



Top with cheese and cook for 15 to 20 minutes.


Chop up some fresh cilantro and scallions for garnish.


Yum!!!
