Healthy Mac-n-Cheese


Here is an easy way to make boxed mac-n-cheese even healthier.  About 2 weeks ago I had the idea to add edamame to the boys' mac-n-cheese.  It is a quick way to add protein to any meal.  Now I am adding a little spinach and a spoonful of flax seed meal and wheat germ.  At first the boys complained, but they ate it.  This is the 3rd time I have made mac-n-cheese this way for them.  No more complaints, they are actually enjoying it.
